Multiple displays have been standard with Mac OS since Mac OS 7. I had three displays on a PPC 8100 machine back in 1995. Doc is using a XServe machine (good if you want a rack mount system, bad if you need multiple video cards - only two slots) with the regular Aqua GUI. The maximum number of displays currently possible on a Mac Pro is eight (four NVIDIA GeForce 7300 GT dual head cards, a build to order option at the Apple Store).

  I've done it with a TripleHead2Go from Matrox.  It's pretty simple
with the OSX Intel Xserver we have...It detects the box automatic
without any drivers needed.  Just go into the display configuration
setup when you've plugged it in.
